<p>For sweetening I use my own homemade stewed apple. I simply peel, remove the core and chop them into smaller chunks. Then I place them in a pot with a lid and bring them gently to the boil. Once it is cooking, I let it simmer until the apple chunks are soft. Of course you can use store-bought apple sauce from a jar.</p>

<p>Before baking, the apples for the topping are lightly sliced, which results in a beautiful effect that make me all dreamy <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f970.png" alt="🥰" class="wp-smiley" style="height: 1em; max-height: 1em;" /> A good apple cake should have a good portion of cinnamon, I believe. Freshly ground nutmeg works well too, should you have to avoid cinnamon.</p>



<p>After baking, I dusted the apple cake with some ground desiccated coconut, which I blended in my mini-blender. </p>

<p><strong>Note: </strong>When baking, it is important to cover the cake. For this I use a small un-coated baking tray which I place right on top of the cake form.</p>

Then place the apple halves on the dough, flat side down. Then bake it without covering for another 10 to 15 minutes or until the apple juice has evaporated and the top of the cake looks dry.</span></div></li></ul></div></div>

<p>Now I managed to get my hands onto some freshly cracked hazelnuts from the South Island of Aotearoa. The flavour! It&#8217;s a dream and perfect for gluten-free baking, specially cake and cookies.</p>



<p>For sweetening I used mostly dates. I find they blend in very well and are very subtle in their flavour. Chocolate and nut will always be one of my favourite flavour combinations <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f60b.png" alt="😋" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>As always, this recipe for Hazelnut and Chocolate Cake is vegan, gluten-free and oil-free. This time I also didn&#8217;t use any rice flour and replaced it with buckwheat flour. I think the recipe will also work well with other gluten-free flours, like oat flour for example.</p>

<p><strong>Note:</strong> Before baking I have dry roasted the hazelnuts for approx. 20 minutes in a frying pan on a low heat while stirring occasionally. Afterwards I rubbed of the skins using a dish towel. This way the hazelnut flavour increases. Afterwards I blend the hazelnuts to fine crumbs, using my high-speed blender (it&#8217;s OK if some crumbs are a bit bigger).</p>

<p>Now I finally I got there and I&#8217;m very happy with this recipe. This vegan and gluten-free Marble Cake has a lovely fluffy texture and is just sweet enough.</p>

<p>The recipe has partially been sweetened with dates and doesn&#8217;t need any oil. The coconut cream adds an almost buttery flavour.</p>

<p>What I found quite fascinating when working on this recipes is how much difference it can make if I use 20g more or 10ml less of a certain ingredient and have quite a big impact on the final result. As soon as possible I will try another version that replaces polenta with semolina like rice.</p>

<h2 class="wp-block-heading">Tipps for this vegan and gluten-free Marble Cake:</h2>



<p><strong>Baking tin</strong> &#8211; depending on the used baking tin the results can vary widely. A dark bundt cake mould with a good non-stick layer is my first choice. I also tried a baking paper lined loaf tin and the baking time changed considerably.</p>



<p><strong>Needle test</strong> &#8211; to make sure that the cake has been baked properly, it is best to test it towards the end of recommended baking time with a needle or wooden skewer to see if the dough is still raw.</p>



<p><strong>Measurements</strong> &#8211; Using the exact amounts listed in the ingredients is very important. I recommend to use a good kitchen scales (water can be weighed too).</p>



<p><strong>Alternatives</strong> &#8211; at this point I can&#8217;t say much about possible alternatives for the listed ingredients. Because the results can vary so much, I recommend not to sub anything. I will keep working on version with alternatives (for example maple syrup instead of rice syrup or semolina rice instead of polenta).</p>

<p>It took me a while to find the perfect texture. Then I tried something that I have never used in baking &#8211; even though I&#8217;ve seen it listed as an egg alternative so many times.</p>

<p>It&#8217;s apple sauce, or in this case: homemade<strong> stewed apple</strong>. Last autumn we had soooo many apples, we made several big pots of stewed apple. And now I can say, stewed apple indeed makes for a very good vegan baking ingredient. It <strong>adds sweetness and helps to create that perfect fluffy texture</strong> that isn&#8217;t too dry. Yay!</p>

<p>That makes this apple cake not only<strong> vegan and gluten-free</strong>, but also <strong>oil-free</strong> and <strong>free from nuts</strong>. It is mostly sweetened with stewed apple. And it is super easy to make. My new favourite, yay <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>This cake is absoulutly delicious! And ever since I went gluten-free I have been trying to come up with a recipe for the sponge cake that is at least <strong>mostly fruit sweetened</strong> and has the same kind of texture and golden colour. I had many fails&#8230;and the more fails I had, the longer it took me to give it another go.</p>

<p>So, yes, this cake is <strong>vegan, gluten-free and without oil</strong>! I still can&#8217;t quite believe it. I used a classic flan / tart pan but you can also use a standard tart form or spring form too.</p>

<h3>For a 28cm flan pan:</h3>
<p><strong>For the dough:</strong><br />
130g rice flour<br />
130g buckwheat flour<br />
2 teaspoon baking powder<br />
400ml water<br />
100g dates,pitted and diced<br />
100g cooked pumpkin or orange sweet potato<br />
2 teaspoon psyllium fiber husk<br />
1/2 teaspoon ground vanilla</p>
<p><strong>For the vanilla custard layer:</strong><br />
250ml plant mylk (I used homemade almond mylk)<br />
40g dates, pitted and diced<br />
2 tablespoon corn starch (or potato starch)<br />
1 teaspoon agar agar powder<br />
1/4 teaspoon vanilla<br />
1 pinch ground turmeric</p>
<p><strong>For the jelly:</strong><br />
200ml water<br />
1 teaspoon agar agar powder<br />
1 teaspoon corn starch (or potato starch)<br />
Fruit for topping (strawberries or other berries, kiwi fruit, sweet persimmon or other fruits)</p>
<h3>Instructions:</h3>
<p>1. Preheat the oven to 180°C (top-/bottom heat). Mix the rice flour, buckwheat flour and baking powder for the dough in a bowl.</p>
<p>2. Blend the remaining ingredients for the dough in a high-speed blender. Pour into the bowl and stir to combine. Spread the dough evenly in the flan pan.</p>
<p>3. Place in oven and bake for approx. 20 minutes or until an inserted wooden skewer comes out clean. Let cool down before taking it out of the pan. It can be a bit tricky, the wooden skewer can be helpful in removing the cake from the pan. Let cool down a little before the next step.</p>
<p>4. For the custard layer, blend all ingredients in a powerful blender until smooth. Pour the mixture into a sauce pan and gently bring to the boil, stirring constantly.</p>
<p>5. Once the custard starts to thicken up considerably, spread it evenly over the cake. Let cool down in the fridge until it is set.</p>
<p>6. Prepare your topping of choice and spread it evenly onto the custard.</p>
<p>7. For the jelly, whisk the ingredients in a small pot and gently bring to the boil. Once it thickens up, let cool down a little bit for a few minutes (make sure it doesn&#8217;t set too early). Then, starting from the center of the cake, drizzle it over the fruits.*</p>
<p>8. Store in fridge for a little longer until the jelly has set. Enjoy! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
<p>* The jelly has a preserving effect and lets the fruits topping stay fresh longer. You don&#8217;t have to add it if the cake will be eating all at once.</p>

<p>I had the pleasure of receiving a few blend from <a href="https://www.mistydaybrews.co.nz/shop" target="_blank" rel="noopener">Misty Day Plant Potions</a> to try. And when I was holding the beautiful Zen Potion in my hands, I had to create a recipe with it! I mean, those blue colours! So soothing&#8230; And I love the subtle flavour of blended spices.</p>

<p>If you don&#8217;t have the Zen Potion from Misty Day Plant Potions, you can also use blue spirulina powder. But I recommend to add vanilla for additional flavour.</p>

<p>Once again, it totally amazed me, how the added zucchini creates <strong>such an amazingly soft and moist texture</strong>. Completely <strong>oil-free</strong>! It took about 4 days to finish the cake and it stayed soft and moist until the very end.</p>

<p>This cake will work with other berries, or a delicious berry mix. And if you are not a fan of combing fruit with chocolate, <strong>you can omit the cocoa powder</strong> in the crust. It&#8217;ll still tastes amazing, if not better (deepening on your favourite taste).</p>

<p>When I listed the ingredients, I was surprised to see that it is actually <strong>only 7 ingredients</strong> that you need! So simple and easy &#8211; I love it! Of course it is <strong>vegan, gluten-free and without refined sugar</strong>. The perfect dessert for Christmas, I like to keep pre-cut slices in the freezer to have a dessert ready even with short notice <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>So I find myself having avocados with everything. I even mash them into my stir-fry &#8211; it tastes delicious! And I found that I&#8217;m sleeping better since I upped my avocado intake. Admittedly, my sleep wasn&#8217;t too best lately. My brain is buzzing away with too many ideas sometimes. Ironically, a quick research showed that avocados can be good and bad for your sleep. Well, I can say I&#8217;ve had amazing sleep even during the full moon at the moment which is bathing us with its beautiful light at night.</p>

<p>So, savoury options for the use of avocado are slowly being exhausted. So I decided to try a sweet treat with it. Something, that people who have to <strong>avoid nuts</strong> would be able to enjoy too. A vegan avocado chocolate mousse cake sounded like a great idea. Instead of nuts I used sprouted buckwheat groats in the crust. <p>The texture of this avocado chocolate mousse is out of this world! I wish my photos could show you how gorgeous it is. But I guess you will have to make it yourself to see what all that fuzz is about.</p>

Add finely chopped dates and cocoa powder and stir to combine, using a fork.</div></li><li id="wprm-recipe-17065-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Line cake tin with baking paper. Knead dough with your hands a little before spreading out evenly in the cake tin. Press firm.</div></li><li id="wprm-recipe-17065-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">For the avocado mousse, mix all ingredients in a small blender until smooth. It might also work well with a hand-held blender or a stick blender.</div></li><li id="wprm-recipe-17065-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour avocado mouse over the crust and spread evenly.</div></li><li id="wprm-recipe-17065-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">For the chocolate drizzle, mix all ingredients in a cup.
