After a large amount has been dehydrated I also stewed some of them &#8211; there simply were too many apples to be shared and eaten in time.<\/p>\n<p>Now I&#8217;ve been thinking about a way of using the stewed apple in baking. And this is what happened: Mini tarts filled with cinnamon stewed apple and crumbles on top. <!--more-->Vegan, gluten-free and absolutely delicious with some vanilla cashew cream! \ud83d\ude42<\/p>\n<p>The home-made stewed apple has some chunks in it and adds a rustic character to the cakes. It probably works with store-bought stewed apple as well &#8211; but the real flavour comes with home-made food \ud83d\ude42<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/mini-apple-tarts.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1101\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/mini-apple-tarts.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"800\" title=\"\"><\/a><\/p>\n<p><strong>For 4 mini tarts you&#8217;ll need:<\/strong><\/p>\n<p>For the crust:<br \/>\n1\/2 cup (70g) buckwheat flour<br \/>\n1\/2 cup (70g) sweet sorghum flour<br \/>\n1\/2 cup (65g) tapioca starch<br \/>\n1 tablespoon fiber husk powder<br \/>\n1 teaspoon baking powder<br \/>\n1 pinch salt<\/p>\n<p>1 banana (very ripe)<br \/>\n6 tablespoon (50g) coconut oil (soft)<\/p>\n<p>For the filling:<br \/>\n2 cups (500g) stewed apple<br \/>\n1-2 teaspoon cinnamon<\/p>\n<p>For the crumbles:<br \/>\n2\/3 cup (85g) sweet sorghum flour<br \/>\n4 heaped tablespoon (40g) coconut sugar<br \/>\n6 tablespoon (50g) coconut oil (soft)<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>For the crust, mix all dry ingredients in a medium sized bowl.<\/p>\n<p>In a small bowl, mash the banana to a fine cream.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/mini-apple-tarts-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1103\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/mini-apple-tarts-2.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"405\" title=\"\"><\/a><\/p>\n<p>Add mashed banana and coconut oil to the dry ingredients and mix well.<\/p>\n<p>Form a ball out of the dough and place in the fridge while preparing the filling and crumbles.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/021.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1102\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/021.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"450\" title=\"\"><\/a><\/p>\n<p>Preheat the oven to 190\u00b0C.<\/p>\n<p>For the filling mix the stewed apple with the cinnamon.<\/p>\n<p>For the crumbles, mix the ingredients in a small bowl and place aside.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/033.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1104\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/033.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"450\" title=\"\"><\/a><\/p>\n<p>Take the dough out of the fridge and make four portions.<\/p>\n<p>It might appear a little dry but once you start forming it into the tart tins (with your clean hands) it will become quite smooth.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/043.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1105\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/043.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"450\" title=\"\"><\/a><\/p>\n<p>Once the dough has been spread in the tart tins, add the filling.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/052.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1106\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/052.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"450\" title=\"\"><\/a><\/p>\n<p>Then, using your (clean) hands, sprinkle the crumbles on top.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/062.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1107\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/062.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"450\" title=\"\"><\/a><\/p>\n<p>Place in the oven and bake for approx. 15 minutes (depending on oven type). It is best to cover the tarts with a loosely placed sheet of aluminum foil for the first 10 minutes. This way they won&#8217;t burn on top.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/012.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1108\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/06\/012.jpg\" alt=\"vegan gluten-free mini cinnamon apple tarts\" width=\"600\" height=\"450\" title=\"\"><\/a><\/p>\n<p>Let cool down for a few minutes before taking them out of the tins.
