This year I wanted to try a raw version. And the result was pretty good!<!--more--><\/p>\n<p>I have tried a dark &#8216;chocolate&#8217; icing and a light coconut-cashew icing. For the chocolate icing I used coconut sugar for sweetening. The only disadvantage is the grainy texture. If I ever get my hands on coconut nectar, I will try it! Raw cane sugar could also be an option. Both icings are great, but it also works without it \ud83d\ude09<\/p>\n<p>In this recipe I&#8217;ve used hazelnuts. I find they make a very good base. You can also use different kind of nuts.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/117_Raw_Lebkuchen.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/117_Raw_Lebkuchen.jpg\" alt=\"Raw Vegan Gluten-free Lebkuchen Gingerbread\" width=\"600\" height=\"800\" class=\"alignnone size-full wp-image-1744\" title=\"\"><\/a><\/p>\n<p><strong>For approx. 12 gingerbread you&#8217;ll need:<\/strong><\/p>\n<p>2 cups hazelnuts (soaked in filtered water for at least 8 hours, then drained)<br \/>\n2 cups dates, pitted and diced<br \/>\n10 dried figs<br \/>\n2 tablespoon gingerbread spice (cinnamon, cloves, allspice, nutmeg, black pepper, cardamon)<br \/>\n1 pinch salt<br \/>\n1-2 tablespoon water (optional)<\/p>\n<p>For the chocolate icing (for 12 lebkuchen):<br \/>\n55g cacao butter<br \/>\n1 cup (100g) FAIR-TRADE cacao powder<br \/>\n1 cup (140g) coconut sugar<\/p>\n<p>For the coconut icing (for 12 lebkuchen):<br \/>\n40g coconut cream\/butter (made from 100% coconut)<br \/>\n10g coconut oil<br \/>\n2 tablespoon cashew butter<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Pulse the hazelnuts to fine grumbles and pour into a medium sized bowl.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/022.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/022.jpg\" alt=\"Raw Vegan Gluten-free Lebkuchen Gingerbread\" width=\"600\" height=\"450\" class=\"alignnone size-full wp-image-1745\" title=\"\"><\/a><\/p>\n<p>Pulse the dates to fine crumbles and add to the bowl.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/03_.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/03_.jpg\" alt=\"Raw Vegan Gluten-free Lebkuchen Gingerbread\" width=\"600\" height=\"450\" class=\"alignnone size-full wp-image-1746\" title=\"\"><\/a><\/p>\n<p>Chop the figs to small cubes and add to the bowl.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/042.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/042.jpg\" alt=\"Raw Vegan Gluten-free Lebkuchen Gingerbread\" width=\"600\" height=\"450\" class=\"alignnone size-full wp-image-1747\" title=\"\"><\/a><\/p>\n<p>Sprinkle with gingerbread spice and mix well.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/052.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2014\/12\/052.jpg\" alt=\"Raw Vegan Gluten-free Lebkuchen Gingerbread\" width=\"600\" height=\"450\" class=\"alignnone size-full wp-image-1748\" title=\"\"><\/a><\/p>\n<p>The dough should be moist enough so that you can form the lebkuchen with your (clean) hands. Add 1-2 tablespoon of water if needed.<\/p>\n<p>Form the lebkuchen with your (clean) hands. Dehydrate them for a few hours. If you don&#8217;t want to store them for a long time you don&#8217;t have to dehydrate them for too long. Wait until the mixture has cooled down enough so that it isn&#8217;t too runny. But not too solid either. I know, a little tricky, but you can do it \ud83d\ude09<\/p>\n<p>Brush onto the lebkuchen once they have cooled down.
