I decided to try some kind of <!--more-->self-saucing pumpkin spice pudding. And boy, it was delicious! <strong>Kind of like cinnamon rolls<\/strong>, but out of a mug&#8230;<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2015\/11\/Vegan-Gluten-free-Oil-free-Pumpkin-Spice-Mug-Cakes-Recipe-0.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8002\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2015\/11\/Vegan-Gluten-free-Oil-free-Pumpkin-Spice-Mug-Cakes-Recipe-0.jpg\" alt=\"\" width=\"800\" height=\"1067\" title=\"\"><\/a><\/p>\n<p>The perfect treat for a winter afternoon&#8230;or a summer day that actually isn&#8217;t like summer at all \ud83d\ude09 <strong>Vegan, gluten-free<\/strong> and sweetened only with dates. With a <strong>soft texture<\/strong>, even though <strong>no oil has been added<\/strong>. Yay! \ud83d\ude42<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2015\/11\/Vegan-Gluten-free-Oil-free-Pumpkin-Spice-Mug-Cakes-Recipe-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8003\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2015\/11\/Vegan-Gluten-free-Oil-free-Pumpkin-Spice-Mug-Cakes-Recipe-2.jpg\" alt=\"\" width=\"800\" height=\"600\" title=\"\"><\/a><\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2015\/11\/Vegan-Gluten-free-Oil-free-Pumpkin-Spice-Mug-Cakes-Recipe-3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8004\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2015\/11\/Vegan-Gluten-free-Oil-free-Pumpkin-Spice-Mug-Cakes-Recipe-3.jpg\" alt=\"\" width=\"800\" height=\"600\" title=\"\"><\/a><\/p>\n<h3><strong>For 2 x 200ml ramekins you&#8217;ll need:<\/strong><\/h3>\n<p><strong>For the pudding:<\/strong><br \/>\n1\/4 cup (35g) rice flour<br \/>\n1\/4 cup (35g) buckwheat flour<br \/>\n1 teaspoon psyllium fiber husk<br \/>\n1\/2 teaspoon baking powder<br \/>\n1\/4 teaspoon baking soda<br \/>\n1-2 pinches salt<\/p>\n<p>80g raw butternut squash, peeled and chopped<br \/>\n1\/2 cup (105g) dates, pitted<br \/>\n1\/2 cup water<\/p>\n<p><strong>For the sauce:<\/strong><br \/>\n3 dried apricots or other dried fruit<br \/>\n1\/3 cup water<br \/>\n1 teaspoon cinnamon<br \/>\n1 teaspoon ground nutmeg<br \/>\n1\/2 teaspoon allspice<\/p>\n<h3><strong>Preparation:<\/strong><\/h3>\n<p>1. Preheat the oven to 190\u00b0C top-\/bottom heat.<\/p>\n<p>2. Mix the dry ingredients in a medium sized bowl.<\/p>\n<p>3. Blend the ingredients for the sauce until smooth. I like to use a small blender like the Personal Blender for this step.<\/p>\n<p>4. Then blend butternut squash, dates and water until smooth. Transfer to the bowl with the dry ingredients and mix well.<\/p>\n<p>5. Pour even portions of the sauce into the ramekins until you have about one teaspoon of sauce left.<\/p>\n<p>6. Scoop even portions of the dough into the ramekins. Then drizzle with remaining sauce.<\/p>\n<p>7. Place in the oven and bake for approx. 5-10 minutes, then cover with a loosely placed sheet of aluminum foil and bake for another 5 minutes, or until an inserted tester comes out clean.<\/p>\n<p>8.
