The other day someone asked me: can&#8217;t you do something with raspberries <!--more-->for a change? Oh yes, I can. Because I still have some raspberries from my own garden stored away in the freezer. I can be quite a squirrel sometimes ?<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2020\/08\/Raspberry-Panna-Cotta-Vegan-Recipe.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9460\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2020\/08\/Raspberry-Panna-Cotta-Vegan-Recipe.jpg\" alt=\"\" width=\"800\" height=\"1066\" title=\"\"><\/a><\/p>\n<p>And recently I found these super cute jelly molds in an op-shop. This was meant to be. Raspberry Panna Cotta, all vegan, gluten-free and fruit-sweetened. Yay!<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2020\/08\/Raspberry-Panna-Cotta-Vegan-Recipe-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9461\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2020\/08\/Raspberry-Panna-Cotta-Vegan-Recipe-2.jpg\" alt=\"\" width=\"800\" height=\"1066\" title=\"\"><\/a><\/p>\n<p>These panna cotta are super easy to make and you can also different fruits or berries. I served them with some cashew vanilla custard which makes a perfect combination of flavours.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2020\/08\/Vegan-Raspberry-Panna-Cotta-Recipe.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9462\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2020\/08\/Vegan-Raspberry-Panna-Cotta-Recipe.jpg\" alt=\"\" width=\"800\" height=\"1066\" title=\"\"><\/a><\/p>\n<h3>Makes 2 Portions:<\/h3>\n<p><strong>For the panna cotta:<\/strong><br>\u2022 100g raspberries<br>\u2022 70g dates, pitted &amp; chopped<br>\u2022 200ml plant mylk<br>\u2022 1.5 tsp agar agar powder<\/p>\n<p><strong>For the vanilla sauce:<\/strong><br>\u2022 40g cashews<br>\u2022 2 dates, pitted &amp; chopped<br>\u2022 approx. 100ml water<br>\u2022 1\/4 tsp vanilla<\/p>\n<h3>Instructions:<\/h3>\n<p>1. Blend all ingredients for the panna cotta in a high-speed blender until smooth. Transfer to a small pot and gently bring to the boil.<\/p>\n<p>2. Let simmer for a few minutes until it thickens up. Transfer to jelly molds after letting it cool down a little bit. Place in fridge until serving.<\/p>\n<p>3. For the vanilla sauce, simply blend all ingredients in a powerful mini blender until smooth.
