But that doesn&#8217;t really worry me. You can transform them into a naughty fry-up. It creates a light and refreshing salad. Perfect for those warmer days of the year or for the classic German New Year&#8217;s Eve dish \ud83d\ude09<\/p>\n<p><strong><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/10\/Vegan-Gluten-free-Potato-Cucumber-Salad-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9362\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/10\/Vegan-Gluten-free-Potato-Cucumber-Salad-2.jpg\" alt=\"\" width=\"800\" height=\"600\" title=\"\"><\/a><\/strong><\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/10\/Vegan-Gluten-free-Potato-Cucumber-Salad-3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9363\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/10\/Vegan-Gluten-free-Potato-Cucumber-Salad-3.jpg\" alt=\"\" width=\"800\" height=\"1067\" title=\"\"><\/a><\/p>\n<h3><strong>For 4 medium portions you&#8217;ll need:<\/strong><\/h3>\n<p>500g boiled potatoes<br \/>\n1 medium sized cucumber<br \/>\n1 bunch parsley<br \/>\n1\/2 small onion &amp; 3-4 spring onion greens<br \/>\nOR 4 whole spring onions<br \/>\n1-2 cloves garlic<br \/>\n1\/2 teaspoon salt<br \/>\n1\/2 teaspoon freshly ground black pepper<br \/>\n2-3 tablespoon apple cider vinegar<br \/>\n1 tablespoon fresh lemon juice<br \/>\n2 tablespoon olive oil<\/p>\n<h3><strong>Preparation:<\/strong><\/h3>\n<p>1. Chop the potatoes into slices or cubes and put aside. Cut the parsley and onion and place into a medium sized bowl.<\/p>\n<p>2. Chop the spring onion greens into fine rings (scissors work well here) and add to the bowl.<\/p>\n<p>3. Cut the cucumber into fine slices and add to the bowl.<\/p>\n<p>4. Press the garlic through a garlic press into the bowl, add salt, pepper, vinegar and lemon juice and mix well. Stir everything well and then add the potatoes.<\/p>\n<p>5. Leave aside for at least 1 hour and add the olive oil before dishing up. It also tastes great with some <a href=\"http:\/\/shop.angelfood.co.nz\/products\/angel-food-smokonut.html\" target=\"_blank\" rel=\"noopener noreferrer\">Angels Food Smokonut<\/a> sprinkled on top.<\/p>\n<p>Enjoy! \ud83d\ude42<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I am really good at cooking too many potatoes.
