And since I&#8217;ve discovered that you actually don&#8217;t need any additional sugar, I love it even more!<\/p>\n<p><!--more--><\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/11\/Chocolate_Banana_Muffins_3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1965\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/11\/Chocolate_Banana_Muffins_3.jpg\" alt=\"Vegan Gluten-free Chocolate Banana Muffins\" width=\"600\" height=\"800\" title=\"\"><\/a><\/p>\n<p>The bananas add a beautiful sweetness and moisture; and as long as the initial dough is not too dry, the muffins will stay moist for a few days.<\/p>\n<p><a href=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/11\/054.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1970\" src=\"https:\/\/theveganmonster.de\/wp-content\/uploads\/2013\/11\/054.jpg\" alt=\"Vegan Gluten-free Chocolate Banana Muffins\" width=\"600\" height=\"450\" title=\"\"><\/a><\/p>\n<h3><strong>For 6 medium sized muffins you&#8217;ll need:<\/strong><\/h3>\n<p>5 very ripe FAIR-TRADE bananas<br \/>\n1 cup (140g) buckwheat flour<br \/>\n1\/2 cup (70g) brown rice flour<br \/>\n3\/4 cup (75g) FAIR TRADE cocoa powder<br \/>\n1 tablespoon fiber husk<br \/>\n2 teaspoon baking powder<br \/>\n1 teaspoon baking soda<br \/>\n1 pinch salt<\/p>\n<p>2 tablespoon olive oil<br \/>\n1 cup water<\/p>\n<h3><strong>Preparation:<\/strong><\/h3>\n<p>1. Preheat the oven to 190\u00b0C (top\/bottom heat). Prepare the muffin tray.<\/p>\n<p>2. Mix all the dry ingredients in a bowl.<\/p>\n<p>3. Mash the bananas in a medium sized bowl. Add the olive oil and water and stir well.<\/p>\n<p>4. Pour the banana mixture into the bowl with the dry ingredients. Mix it well but avoid stirring it too long otherwise the dough won&#8217;t rise properly.<\/p>\n<p>5. Scoop the dough into the muffin tray. It might seem like a little too much but it should work well.<\/p>\n<p>6. Bake for approx 30 minutes at 190\u00b0C (depending on your stove).
