<p>Usually I like to throw some mashed banana into my pancakes. These pancakes however are without bananas. This was a request by one of my lovely readers. Since I know what it&#8217;s like when you have to avoid certain foods, I was more than happy to try<strong> a banana-free version</strong>.</p>

<p>For sweetening I have used dried apricots. This will also work well with other dried fruits, like dates or even figs. <strong>Please be aware</strong> that these pancakes are not overly sweet. I served them with a creamy vanilla sauce and it was perfect!</p>



<p>And while I have used raspberries, you can also use strawberries, blueberries or blackberries. As always, this recipe is vegan, gluten-free and once again oil-free <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

Now I tried something completely different, with a flavour combination of vanilla cream and berries. One of my favourite combos!</p>

<p>Completely vegan, gluten-free and only sweetened with dates, this recipe is super easy to make. It doesn&#8217;t require an ice-cream machine. But a high-speed blender is essential. Then add remaining ingredients and blend long enough for it to turn creamy and heat up (alternatively heat it up in a small pot).</div></li><li id="wprm-recipe-17327-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">While the vanilla cream cools down, place the ingredients for the berry drizzle in a pot. Leave the extra 50g blueberries aside. Bring the berries to the boil and let simmer for a few minutes. Then blend with a stick blender until smooth and let cool down.</div></li><li id="wprm-recipe-17327-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once cooled down, stir in extra blueberries. Line a 20cm loaf tin with baking paper. Drizzle with some berry sauce. Add some vanilla cream. <p>And recently I found these super cute jelly molds in an op-shop. This was meant to be. Raspberry Panna Cotta, all vegan, gluten-free and fruit-sweetened. Yay!</p>

<p>These panna cotta are super easy to make and you can also different fruits or berries. I served them with some cashew vanilla custard which makes a perfect combination of flavours.</p>

<h3>Makes 2 Portions:</h3>
<p><strong>For the panna cotta:</strong><br>• 100g raspberries<br>• 70g dates, pitted &amp; chopped<br>• 200ml plant mylk<br>• 1.5 tsp agar agar powder</p>
<p><strong>For the vanilla sauce:</strong><br>• 40g cashews<br>• 2 dates, pitted &amp; chopped<br>• approx. 100ml water<br>• 1/4 tsp vanilla</p>
<h3>Instructions:</h3>
<p>1. Blend all ingredients for the panna cotta in a high-speed blender until smooth. Transfer to a small pot and gently bring to the boil.</p>
<p>2. Let simmer for a few minutes until it thickens up. Transfer to jelly molds after letting it cool down a little bit. Place in fridge until serving.</p>
<p>3. For the vanilla sauce, simply blend all ingredients in a powerful mini blender until smooth. Depending on how creamy you like it, adjust the amount of water.</p>

<p>These berries had to be used for <strong>something special</strong>. With Christmas just around the corner, I opted for a festive No Bake Raspberry Chocolate Cake. <p>This cake will work with other berries, or a delicious berry mix. And if you are not a fan of combing fruit with chocolate, <strong>you can omit the cocoa powder</strong> in the crust. It&#8217;ll still tastes amazing, if not better (deepening on your favourite taste).</p>

<p>When I listed the ingredients, I was surprised to see that it is actually <strong>only 7 ingredients</strong> that you need! So simple and easy &#8211; I love it! Of course it is <strong>vegan, gluten-free and without refined sugar</strong>. The perfect dessert for Christmas, I like to keep pre-cut slices in the freezer to have a dessert ready even with short notice <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>There raspberries, plums and quite a bit of nut pulp that has been leftover from making my own almond milk (something that <a href="https://theveganmonster.de/en/how-to-make-your-own-nut-milk/">I really recommend</a>). This nut pulp is an incredible ingredients for cakes. It adds this amazing soft texture to baked stuff. Like the <a href="https://theveganmonster.de/en/apfel-zimt-kuchen-vegan-glutenfrei/">apple cinnamon cake</a> or these <a href="https://theveganmonster.de/en/chocolate-muffins-vegan-gluten-free/" class="rank-math-link">chocolate muffins. And yes, there were also raspberries!</a></p>

<p>Besides using up some raspberries, I also wanted to create another no bake recipe that <strong>doesn&#8217;t use cashews</strong>. After I made this delicious <a href="https://theveganmonster.de/en/himbeer-eiscreme-vegan/">Almond Raspberry Ice Cream</a> the other, I was convinced that it would work in a no bake cake recipe as well. And it does, yay!</p>

<p>What amazes me the most, is that this recipe uses only 6 ingredients! Plus the garnish of course. <p>The raspberries make for quite a tart treat. If you like it a little sweeter, I recommend to add some more sweetness to raspberry layer.</p>

<p><strong>Please note:</strong> in order to get a creamy consistency, you have to use a powerful high-speed blender and also use the tamper. Otherwise you have to add a little more water which won&#8217;t have the same results. Then it will be more like an ice cream cake.</p>

But it calls for dates as a sweetener. After receiving quite a bit of feedback and demand for date-free options, I decided to try another version. This time I have used coconut sugar to sweeten it. So it still contains sugar. <p>Also, <strong>this recipe has a little twist</strong>. Because there aren&#8217;t only raspberries in it to create that dreamy pink colour. I have also snuck in some beetroot. <p>There are <strong>two options to make this</strong> vegan ice-cream: by using a high-speed blender and an ice cream maker or by using only the high-speed blender. Makes approx. 1 liter:<br />
</strong><br />
1 cup (140g) almonds, soak for at least 8 hours in water, then rinse and drain<br />
1/4 cup + 2 tablespoon (70g) coconut sugar<br />
50g beetroot (cooked or raw, add more if you like it more pink)<br />
1 teaspoon guar gum<br />
200g raspberries<br />
2 1/2 cups (600ml) water<br />
a handful of raspberries for garnish (I also used chopped pistachios)</p>
<p><strong>Instructions for ice cream maker:<br />
</strong><br />
1. Blend all ingredients in a powerful blender until smooth.<br />
2. Pour into ice cream maker and churn until it is finished. Transfer mixture into a freezer safe container. Sprinkle with raspberries and stir them into the ice cream a little. You may want to store it in the freezer for a little while to make it firm up some more.<br />
3. If you leave the ice cream in the freezer for longer, let the ice cream thaw for at least 1/2 hour before serving.</p>
<p><strong>Instructions with high-speed blender:<br />
</strong><br />
1. Blend all ingredients in a high-speed blender until smooth.</p>
<p>2. Pour mixture into large ice cube forms or approx. finger thick into freezer safe containers. Place in freezer.</p>
<p>3. Once frozen, chop up the slabs into rough chunks and place in high-speed blender. Blend on high-speed, using the temper to press the chunks into the blades (similar as you would make nice cream out of frozen bananas).</p>
<p>4. Transfer the ice cream to freezer safe container. Sprinkle with raspberries and stir them into the ice cream a little. You may want to store it in the freezer for a little while to make it firm up some more.</p>
<p>If you leave the ice cream in the freezer for longer, let the ice cream thaw for at least 1/2 hour before serving.</p>

<p>This recipe for raspberry ice-cream is as always <strong>vegan, gluten-free and without refined sugar</strong>. And this time it is also <strong>free from cashews or coconut</strong>! The secret ingredient is blanched almonds.</p>

<p>I recommend to use an ice-cream maker for this recipe, but you could also make it in a high-speed blender or simply freeze it and stir every now and then. <p><strong>Makes approx. 1.5 liter:</strong></p>
<p>3/4 cup (105g) blanched almonds, soak for at least 8 hours in water then rinse and drain<br />
1 1/4 cup (180g) dates, pitted and diced<br />
4 cups (1000ml) water<br />
200g raspberries</p>
<p>a handful of raspberries for garnish</p>
<p><strong>Preparation:</strong></p>
<p>1. Place all ingredients but the raspberries in a high-speed blender and blend until smooth.</p>
<p>2. If you wish to add a few almond cream swirls into the ice-cream, take aside about 1/2 cup of the almond cream.</p>
<p>3. Add raspberries and blend until smooth.</p>
<p>4. Transfer to ice-cream maker and let churn until it is firm enough.</p>
<p>5. Place one layer of raspberry ice-cream into a glass container. Then drizzle with almond cream and extra raspberries. Continue until ice-cream, almond cream and raspberries are finished.</p>
<p>6. Place in freezer to firm up a little more. If you let it in the freezer for longer, allow it to defrost for half an hour or so before serving.</p>

<p>I must admit that I prefer dates for sweetening though. They add volume, a creamy texture and compared to sugar, they are so unrefined.</p>



<p>So, in this recipe I use maple syrup for sweetening. In order to achieve a creamy texture, I added some psyllium husk to the filling.</p>

<p>There is less volume so you will need more nuts. I have added some sunflower seeds in order to reduce the amount of cashews needed. You will be able to taste the sunflower seeds a little. If that isn&#8217;t your thing, I recommend to go with cashews all the way.</p>

<p>As always, this <strong>no-bake vanilla raspberry recipe</strong> is <strong>vegan, gluten-free and without refined sugar</strong> (if you want to call maple syrup unrefined that is <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /> You can also use coconut nectar or rice syrup).</p>

<p>Also, you can make the cake using two cake tins to achieve the &#8216;hidden filling&#8217; effect, or use only one cake tin and make two layers on top of each.</p>

Then add the remaining ingredients and blend until smooth. It might pay to use a tamper to get the mixture moving.</div></li><li id="wprm-recipe-17223-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Spread approx. half of the amount of the raspberry cream into the springform  . Then place springform in freezer until the filling is relatively firm (approx. 1 to 2 hours).</div></li><li id="wprm-recipe-17223-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Scoop the remaining dough into the springform and press it firm. Then spread the remaining raspberry cream into the form. <h3><strong>For approx. 10 ice-pops you&#8217;ll need:</strong></h3>
<p>2 cups (approx. 200g) raspberries<br />
1 cup (140g) dates, pitted<br />
1/2 cup (70g) soaked cashews (for a nut-free version omit the cashews and use plant-based milk instead of water)<br />
1 1/2 cup (375ml) water</p>
<p>For the chocolate:<br />
40g cacao butter, melted<br />
1 tablespoon and 1 teaspoon finely ground coconut sugar<br />
2 tablespoon FAIR-TRADE cacao or cocoa powder<br />
cacao nibs if desired</p>
<h3><strong>Preparation:</strong></h3>
<p>1. Blend all ingredients for the ice pops in a high speed blender until smooth. Let the dates soak in the water for a while before blending.</p>
<p>2. Pour into ice pop molds, place lid on top, insert popsicle sticks and place in freezer until set.</p>
<p>3. Once ice pops are frozen, take them out of the molds and place in freezer.</p>
<p>4. Prepare the chocolate drizzle by mixing all ingredients in a cup that has been placed in a bowl with hot water. Stir well until dissolved.</p>
<p>5. Take ice pops out of freezer and drizzle with chocolate (using a teaspoon), sprinkle with cacao nibs if desired. Please note: the sauce will be enough to cover one side of each popsicle. If you wish to cover both sides better double the amount.</p>
<p>6. Place in container in freezer or serve immediately.</p>
