I haven’t tried this very recipe in muffin molds yet. I would cautiously agree. But I know what you mean, hazelnuts can be a bit tricky in baking. It usually becomes more of a dense cake texture. Like in this Hazelnut Chocolate Cake recipe.
I shall put it on my list of things/variations to try and will let you know the result.

Do you think this could work if I baked them in silicone moulds? I tried to adapt a similar recipe for baked ones and failed when using hazelnuts because it wouldn’t cook enough.
