Berry Jelly (Vegan)

This vegan & gluten-free berry jelly is a super simple dessert that tastes like summer in a glass. With just fruit juice, your favourite berries and a natural gelling agent like agar agar, you can create a colourful layered dessert that sets beautifully as it cools. Once chilled, top it with extra berries, a creamy plant-based sauce or a sprig of mint — perfect for family dinners or relaxed gatherings.

Ingredients
  

  • 1 1/2 cup berries
  • 1/4 cup fruit syrup with 1 cup water
  • OR 1/4 cup pure red fruit juice such as black current juice with 1 cup water
  • 1 1/2 teaspoons agar agar

Instructions
 

  • Place all the ingredients in a medium sized pot.
    1 1/2 cup berries, 1/4 cup fruit syrup with 1 cup water, OR 1/4 cup pure red fruit juice such as black current juice with 1 cup water, 1 1/2 teaspoons agar agar
  • Let the agar agar soak for 10 to 15 minutes.
  • Bring it to boil over low heat. Let simmer for 5 minutes.
  • Fill into the dessert bowls and let cool down. To maximize the refreshing effect you can chill them in the fridge and get them out a few minutes before serving.

Notes

I love to add a splash of vanilla custard sauce (I will upload this recipe soon), a few berries and a mint leaf.
