<p>Die Füllung wurde gekocht, mit einer pflanzlichen Alternative zu Gelatine, dem sogenannten Agar Agar Pulver. Dabei kommt es auf die Dosis an. Verwendest du zu wenig, wird die Masse nicht richtig fest. Ist es zu viel, wird sie etwas gummiartig. Ich verwende gern ungefähr 1 Teelöffel pro 250ml und das funktioniert ganz gut. Und mit etwas Kurkuma kommt gleich etwas gelbliche Farbe in Spiel &#8211; passend zu den Zitronen <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>Die komplette Zitronen Tarte kommt ohne Mehl oder Getreide aus. Der Boden ist aus Mandeln und Datteln, welche im Mixer zu feinen Krümeln gemahlen werden. Wenn es um Zitronengeschmack geht mag ich es eher kräftig. Deswegen empfehle ich, das Rezept nach deinem Geschmack anzupassen und falls gewünscht weniger oder mehr Zitronensaft oder -schale zu verwenden.</p>

<h2 class="wp-block-heading">Blindbacken</h2>



<p>Der Boden wird zunächst gebacken bevor er gefüllt wird. Damit es gut klappt beim Vorbacken, kommt das sogenannte Blind Backen zum Einsatz. Hierbei wird der Teig etwas beschwert, sodass er beim Backen sich nicht zu sehr aufwölbt. Quasi wird eine Pseudo Füllung verwendet, um den Teig flach zu lassen. Dazu wird der Teig zunächst mit etwas Backpapier bedeckt und dann mit Gewicht beschwert.</p>



<p><strong>Hierzu kannst du folgendes verwenden:</strong></p>



<ul class="wp-block-list">
<li>fertige Blindbacken Murmeln</li>
<li>getrocknete Hülsenfrüchte (sei es Erbsen, Bohnen etc.)</li>
<li>Kaffeebohnen</li>
<li>Reis oder anderes Getreide</li>
<li>sterilisierte Kieselsteine (dies habe ich auch schon erfolgreich probiert)</li>
</ul>



<p>Dieses Rezept für Zitronen Tarte ist wie immer vegan, glutenfrei und fruchtgesüßt. Es kommt außerdem ohne Soja und ohne Getreide aus.</p>

Letztere benötigen größere Mengen für das gleiche Resultat. Es gibt zudem Geliermittel die nur einen Teil Agar Agar verwenden. Es <strong>muss reines Agar Agar Pulver</strong> sein.</span><div class="wprm-spacer"></div>
<span style="display: block;">Beim Arbeiten mit Agar Agar Pulver kommt es auf die <strong>genaue Menge</strong> an damit es nicht zu fest und nicht zu flüssig wird. Zum Messen verwende ich <strong>spezielle Messlöffel</strong>. 1 Teelöffel entspricht 5 ml und 1/4 Teelöffel entspricht 1.25 ml.</span></div></div>

<p>Die Zitrus-Saison ist gerade voll im Schwung und ich fühle mich zu neuen Rezeptideen geradezu herausgefordert. <p>Ich würde kleinere Portionen empfehlen, da es doch recht füllend und geschmackvoll ist. Und wie immer ist ein Hochleistungsmixer für das beste Ergebnis angeraten.</p>
