<p>Now I managed to get my hands onto some freshly cracked hazelnuts from the South Island of Aotearoa. The flavour! It&#8217;s a dream and perfect for gluten-free baking, specially cake and cookies.</p>



<p>For sweetening I used mostly dates. I find they blend in very well and are very subtle in their flavour. Chocolate and nut will always be one of my favourite flavour combinations <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f60b.png" alt="😋" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>As always, this recipe for Hazelnut and Chocolate Cake is vegan, gluten-free and oil-free. This time I also didn&#8217;t use any rice flour and replaced it with buckwheat flour. I think the recipe will also work well with other gluten-free flours, like oat flour for example.</p>

<p><strong>Note:</strong> Before baking I have dry roasted the hazelnuts for approx. 20 minutes in a frying pan on a low heat while stirring occasionally. Afterwards I rubbed of the skins using a dish towel. This way the hazelnut flavour increases. Afterwards I blend the hazelnuts to fine crumbs, using my high-speed blender (it&#8217;s OK if some crumbs are a bit bigger).</p>

<p>For sweeteneing I have used dates, which also add soe more creaminess to the texture. And thanks to the sunflower seeds the recipe is not only vegan and gluten-free but also nut-free.</p>

<p>While these panna cotta use whole coffee beans you can also use cocoa powder and create a yummy choclate flavoured version.</p>

<p>Panna cotta are one of my favourite vegan desserts because they are so light and not so filling. Also, they are so easy to make! Simply blend, heat up, pour into moulds, done! <p>The pink chai glaze is sweetened with fruit. The lovely pink colour comes from cooked beetroot. You can also use beetroot powder or raw beetroot. I made the chai spice mix myself by blending ginger, cinnamon, cardamom, cloves and allspice.</p>

<p>The cookies are also sweetened with dates. They make for a lovely, soft texture. And as always this recipe for pink chai chocolate cookies is vegan, gluten-free and without oil.</p>

<h3 class="wp-block-heading">Makes about 12 Cookies:</h3>



<p><strong>For the cookies:</strong><br>• 100g dates, pitted and chopped<br>• 170ml water<br>• 50g almond butter (or other nut/seed butter)<br>• 130g rice flour<br>• 50g buckwheat flour<br>• 3 tbsp FAIR-TRADE cacao<br>• 1 tbsp ground psyllium fiber<br>• 1/2 tsp baking powder<br>• some FAIR-TRADE chocolate for glazing</p>



<p><strong>For the pink glazing:</strong><br>• 30g cooked beetroot<br>• 3 dates, pitted &amp; chopped<br>• 50 bis 60ml water<br>• 20g cacao butter, melted<br>• 60g cashews or blanched almonds<br>• 1/2 tsp chai spice</p>



<h3 class="wp-block-heading"><strong>Method:</strong></h3>



<ol class="wp-block-list"><li>Preheat the oven to 170°C (top/bottom heat). Blend dates, water and almond butter with a stick blender until smooth.</li></ol>



<ol class="wp-block-list" start="2"><li>Mix the remaining ingredients in a bowl. Add the dates mixture and stir to combine.</li></ol>



<ol class="wp-block-list" start="3"><li>Roll out the dough between sheets of baking paper. Cut out cookies and place them on a baking tray (sprinkle with some flour if the dough is too sticky). Repeat until the dough is used up.</li></ol>



<ol class="wp-block-list" start="4"><li>Bake for approx. 12 to 15 minutes. Let cool down properly.</li></ol>



<ol class="wp-block-list" start="5"><li>For the glaze blend all ingredients in a powerful mini blender. Spread evenly over the cookies. Place in an air-tight container and store in the fridge.</li></ol>



<p><strong>Note:</strong> The glaze doesn’t turn completely firm. It is best used as a filling between two cookies.</p>

Now I tried something completely different, with a flavour combination of vanilla cream and berries. One of my favourite combos!</p>

<p>Completely vegan, gluten-free and only sweetened with dates, this recipe is super easy to make. It doesn&#8217;t require an ice-cream machine. But a high-speed blender is essential. Then add remaining ingredients and blend long enough for it to turn creamy and heat up (alternatively heat it up in a small pot).</div></li><li id="wprm-recipe-17327-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">While the vanilla cream cools down, place the ingredients for the berry drizzle in a pot. Leave the extra 50g blueberries aside. Bring the berries to the boil and let simmer for a few minutes. Then blend with a stick blender until smooth and let cool down.</div></li><li id="wprm-recipe-17327-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once cooled down, stir in extra blueberries. <h3>Ingredients for approx. 1 liter:</h3>
<p>• 100g cashews (or blanched almonds, or macadamias)<br />
• 80g dates, pitted and diced<br />
• 400ml water<br />
• 200ml coconut cream (or plant mylk)<br />
• 1/2 teaspoon guar gum<br />
• 2-3 teaspoon blue spirulina (depending on how blue you like it)</p>
<h3>Instructions:</h3>
<p>1. In a powerful blender, blend all ingredients but the spirulina until creamy.</p>
<p>2. Pour the mixture into the ice cream maker and let it run until the ice cream is ready.</p>
<p>3. Transfer the ice cream to a freezer safe container and stir in as much spirulina as you like.</p>
<p>4. If desired, place the ice cream in the freezer until it is firmer. Should you leave the ice cream in the freezer for longer, let a thaw a little before serving.</p>

<p>The combination of vanilla ice cream and strawberries is so yummy! But you can also use other berries or fruits. While this recipe is nut-free, it is also gluten-free and sweetened with fruits.</p>

<h3>Ingredients:</h3>
<p>• 450ml mylk<br />
• 65g dates, pitted<br />
• 3 tbsp tapioca<br />
• 1/3 tsp ground vanilla<br />
• 1 pinch salt<br />
• 150g strawberries, diced</p>
<h3>Instructions:</h3>
<p>1. Blend all ingredients but the strawberries in a powerful blender until smooth.</p>
<p>2. Pour mixture into a pot and gently bring to the boil. Let simmer shortly, stirring constantly, then let cool down completely.</p>
<p>3. Transfer the cooled down mixture to the ice cream maker. Once it has turned to ice cream, stir in the diced strawberries.</p>
<p>4. If desired, place in the freezer for a firmer texture. Should you leave it in the freezer for longer, let thaw a little before serving.</p>

<p>This cake is absoulutly delicious! And ever since I went gluten-free I have been trying to come up with a recipe for the sponge cake that is at least <strong>mostly fruit sweetened</strong> and has the same kind of texture and golden colour. I had many fails&#8230;and the more fails I had, the longer it took me to give it another go.</p>

<p>Then these yeast-free bread rolls happened and I was inspired to use a similar concept for the sponge cake. <strong>Cooked pumpkin or kumara (sweet potato) was the secret ingredient!</strong> Yay! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>So, yes, this cake is <strong>vegan, gluten-free and without oil</strong>! I still can&#8217;t quite believe it. I used a classic flan / tart pan but you can also use a standard tart form or spring form too.</p>

<h3>For a 28cm flan pan:</h3>
<p><strong>For the dough:</strong><br />
130g rice flour<br />
130g buckwheat flour<br />
2 teaspoon baking powder<br />
400ml water<br />
100g dates,pitted and diced<br />
100g cooked pumpkin or orange sweet potato<br />
2 teaspoon psyllium fiber husk<br />
1/2 teaspoon ground vanilla</p>
<p><strong>For the vanilla custard layer:</strong><br />
250ml plant mylk (I used homemade almond mylk)<br />
40g dates, pitted and diced<br />
2 tablespoon corn starch (or potato starch)<br />
1 teaspoon agar agar powder<br />
1/4 teaspoon vanilla<br />
1 pinch ground turmeric</p>
<p><strong>For the jelly:</strong><br />
200ml water<br />
1 teaspoon agar agar powder<br />
1 teaspoon corn starch (or potato starch)<br />
Fruit for topping (strawberries or other berries, kiwi fruit, sweet persimmon or other fruits)</p>
<h3>Instructions:</h3>
<p>1. Preheat the oven to 180°C (top-/bottom heat). Mix the rice flour, buckwheat flour and baking powder for the dough in a bowl.</p>
<p>2. Blend the remaining ingredients for the dough in a high-speed blender. Pour into the bowl and stir to combine. Spread the dough evenly in the flan pan.</p>
<p>3. Place in oven and bake for approx. 20 minutes or until an inserted wooden skewer comes out clean. Let cool down before taking it out of the pan. It can be a bit tricky, the wooden skewer can be helpful in removing the cake from the pan. Let cool down a little before the next step.</p>
<p>4. For the custard layer, blend all ingredients in a powerful blender until smooth. Pour the mixture into a sauce pan and gently bring to the boil, stirring constantly.</p>
<p>5. Once the custard starts to thicken up considerably, spread it evenly over the cake. Let cool down in the fridge until it is set.</p>
<p>6. Prepare your topping of choice and spread it evenly onto the custard.</p>
<p>7. For the jelly, whisk the ingredients in a small pot and gently bring to the boil. Once it thickens up, let cool down a little bit for a few minutes (make sure it doesn&#8217;t set too early). Then, starting from the center of the cake, drizzle it over the fruits.*</p>
<p>8. Store in fridge for a little longer until the jelly has set. Enjoy! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
<p>* The jelly has a preserving effect and lets the fruits topping stay fresh longer. You don&#8217;t have to add it if the cake will be eating all at once.</p>

<p>I had the pleasure of receiving a few blend from <a href="https://www.mistydaybrews.co.nz/shop" target="_blank" rel="noopener">Misty Day Plant Potions</a> to try. And when I was holding the beautiful Zen Potion in my hands, I had to create a recipe with it! I mean, those blue colours! So soothing&#8230; And I love the subtle flavour of blended spices.</p>

<p>If you don&#8217;t have the Zen Potion from Misty Day Plant Potions, you can also use blue spirulina powder. But I recommend to add vanilla for additional flavour.</p>
