<p>Ich habe vor Ewigkeiten mal ein Rezept für glutenfreies Brot ohne Hefe bei <a href="https://freiknuspern.de/2018/03/18/einfaches-glutenfreies-brot-ohne-hefe-oder-sauerteig-vegan/" target="_blank" rel="noopener">Freiknuspern</a> gesehen. Habe mich aber einfach nicht daran gewagt, hauptsächlich auch, weil ich einige Zutaten nicht zur Hand hatte. Als es mich mal wieder packte, probierte ich einfach etwas herum mit dem, was ich im Speiseschrank hatte. Und siehe da! Es funktioniert!</p>

<p>Wie geht das jetzt ohne Hefe? Letztendlich ist es eigentlich ganz einfach: <strong>Flohsamenschalen to the rescue! Und Backpulver</strong>. Ich habe mittlerweile einige Versionen von diesen Brötchen gebacken. Und jetzt ist es endlich soweit!</p>

Alternativ kann ich mir Kichererbsenmehl oder Rote Linsen Mehl vorstellen, kann aber nichts garantieren, da ich dies noch nicht probiert habe. Wahrscheinlich benötigst du dann etwas mehr Wasser und ca. 5 Minuten längere Backzeit (siehe auch Kommentar von Nadine, danke <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /><br />**Ich habe einen alten Elektroherd. Nachdem ich die Brötchen hinein getan habe, sinkt die Temperatur auf ca. 170° und geht dann langsam wieder auf 210° hoch. Ich empfehle ein Ofenthermometer.</span></div></div>

Schütte die Kürbismischung hinzu, verrühre es und knete es zu einem Teig.</div></li><li id="wprm-recipe-11891-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Forme die Brötchen mit kalten, nassen Händen und lege sie auf ein Backblech. Pinsel sie mit der Glasur ein.</div></li><li id="wprm-recipe-11891-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Gib die Mischung für die Kreuze eine eine Spritztüte oder -fläschchen. Sollte die Mischung allzu dickflüssig sein, rühre ein paar Tropfen Wasser hinein. <h3 class="wp-block-heading">Glutenfreie und vegane Burger-Brötchen mit Buchweizenmehl</h3>



<p>Und dann passierte es, mein liebstes glutenfreies Mehl (Teff) war in meinem Lieblingsladen nicht mehr lieferbar. Also fing ich an, mehr mit <a href="https://www.kochwiki.org/wiki/Zutat:Buchweizenmehl" target="_blank" rel="noreferrer noopener">Buchweizenmehl</a> zu arbeiten. Es hat andere Backeigenschaften und verhält sich auch anders als Teff Mehl.</p>

<p>Ich habe Mini-Kuchenformen mit einem Durchmesser von 10cm verwendet, denn sie halten und geben den Brötchen eine gute Form. Du kannst auch eine Muffinform verwenden, nur werden es dann 6 eher kleinere Brötchen.</p>
