You guys asked if you can make my no-bake cake recipes without dates as well. You can 🙂 So in this no-bake cake recipe the filling is without dates. Feel free to replace the dates in the crust with other sweeteners too.

It’s kiwifruit season here in New Zealand! While I’m not a fan of those sickly sweet golden kiwifruits, I’m a real sucker for the green variety with its slight tangy flavour. These furry little things are a real super food, bursting with vitamin C and many other important minerals and vitamins.
While it is officially autumn here, we still have beautiful, sunny days in NZ. As long as I get one or two sun rays landing on my nose, I will not store the ice-cream maker away 😉
If you have followed my blog for a while, you probably noticed that I am kind of a raspberry girl… 😉 There are many recipes on the blog that feature this delicious little berry. I just can’t help it, because it is such an amazing ingredient for different flavour combinations.
With all that book writing and proofing I still found time to do some Christmas biscuit baking last weekend. Phew!
I’m a big fan of berries. They are the ultimate super food and really, you don’t have to get them out of the rain-forest. Good old raspberry, blueberry, black current etc just do the trick!
