This recipe makes a light and refreshing dessert for the warmer days of the year.
You can use fruit juice or fruit syrup (I’ve discovered fruit syrup without refined sugar which is good to have for those moments where no ‘real’ juice is available). The juice used in this recipe should be a ‘red’ one.
For the fruits you can basically use any kind of berry – I personally prefer blueberries or mixed berries.
To make a dessert for 4 people you’ll need:
1 1/2 cup berries
1/4 cup fruit syrup with 1 cup water
OR 1/4 cup pure (red) fruit juice such as black current juice with 1 cup water
1 1/2 teaspoons agar agar
Preparation:
Place all the ingredients in a medium sized pot.
Let the agar agar soak for 10 to 15 minutes.
Bring it to boil over low heat. Let simmer for 5 minutes.
Fill into the dessert bowls and let cool down. To maximize the refreshing effect you can chill them in the fridge and get them out a few minutes before serving.
I love to add a splash of vanilla custard sauce (I will upload this recipe soon), a few berries and a mint leaf.
