I’m getting into home-made burgers again… And a good burger always comes with a nice sauce! I really like horse radish sauce. If you haven’t tried it yet, I can only recommend it! 🙂
But I’ve wanted something raw with a similar flavour kick to it. And that was when radish season kicked in here in New Zealand. There is this spray-free framer at the farmers market who grows these amazing multi-coloured radishes. They look and taste amazing!
So I had to try and make my own vegan, raw radish sauce with them. And I was not disappointed. This sauce is amazing with burgers! You could try it with these Kidney Bean Soy Burgers, the Mushroom Burgers or the Quinoa Burger. It definitely tastes amazing and lifts the whole dish to another level 🙂
And while they taste amazing, radishes have amazing health benefits as you can see in this article. Also, you can eat the greens! Chop them up and add them to your salad or sandwich. There are so many options 🙂
Makes about 1 cup of dip/sauce:
1/2 cup (70g) cashews
up to one bunch fresh radishes
up to 1/4 cup water, if needed
salt to taste
Preparation:
1. Place cashews, some of the water and most of the radishes into a powerful mini-blender and blend until smooth. Use more water if needed.
2. Add salt to taste and also add more radishes if you like it spicier.
3. Grate one or two radishes to add as garnish.
