Super yummy, soft and chewy chocolate cookies, that are fairly easy to make and you can garnish to your liking them with lots of yummy things. Funny enough, I wasn’t even planning to make cookies. It was actually meant to be a pie crust…
Turns out this is waaay better. And as always, these cookies are vegan, gluten-free and without refined sugar. I actually sweetened them with dates. It doesn’t need nuts and no oil either. Yay!
For the chocolate glaze, I simply use melted TradeAid dark chocolate drops. They are my go to chocolate for recipes like this and they are organic as well as fair-trade 🙂
Chocolate Glazed Cookies (Vegan, Gluten-free, Nut-free, Oil-free, Fruit-Sweetened)
- 90 g dates pitted
- 180 ml hot water
- 100 g rice flour
- 50 g buckwheat flour
- 1 tbsp ground psyllium husk fiber
- 3 tbsp coconut flour
- 1/2 tsp baking powder
- Chop up dates and place in a bowl. Cover with hot water and let sit for approx. 30 minutes. Then blend with a stick blender until smooth.
- Preheat oven to 170°C (top/bottom heat). Mix remaining ingredients in a separate bowl. Pour in dates mixture and mix well to form a dough.
- Roll out the dough (it works best between two sheets of baking paper). Cut out cookies and place on baking tray. Repeat until dough is used up. Bake for approx. 12 minutes.
- Once the cookies have cooled down, glaze with melted chocolate and garnish to your liking.
